Recipe: Oatmeal Creme [Protein] Pie

Last weekend, I visited my boyfriend in Atlanta, Georgia. He and I both have a sweet tooth but he isn’t as much of a chocoholic like me. Instead, I decided to try a different kind of protein-packed sweet curbing treat.

Behold, the oatmeal creme protein pie.

The soft, yet crunchy cookies surround a yogurt-based filling. The recipe is easy to modify with add-in ingredients like chocolate chips, raisins, nut butters and more.

I chose not to add any additional sugars, because the Greek yogurt and whey protein have some natural-derived sugars in them. But, you can definitely use honey, stevia, monk fruit, agave or maple syrup in the cookies and filling for some added flavor.

Oatmeal Creme Protein Pies

Makes 8 single cookies, 4 sandwiches with filling. Macros calculated per cookie with about 2 Tbsp filling.

Ingredients

Cookies

  • 1 cup quick oats
  • 1/4 cup whole wheat pastry flour (Bob’s Red Mill is my favorite)
  • 1/2 scoop vanilla or cinnamon whey protein (True Nutrition used here)
  • 1 Tbsp flaxseed meal
  • 1/4 cup unsweetened coconut almond milk (or other milk of choice)
  • 1/4 cup egg whites (Egg Whites International)
  • 2 Tbsp coconut oil, melted
  • Vanilla and Cinnamon for taste
  • Optional sweeteners

Filling

  • 1 cup plain nonfat Greek yogurt
  • 1/2 scoop casein whey protein
  • Optional sweeteners

Procedure

  • Preheat oven to 350 degrees Fahrenheit.
  • In a medium bowl, combine dry ingredients.
  • Incorporate wet ingredients and stir until dough forms.
  • Spray baking sheet and form eight balls that will be flattened into cookies.
  • Bake for 8-12 minutes.
  • While baking, prepare filling.
  • Combine Greek yogurt and whey protein. Place in freezer for at least 15-30 minutes. The longer it sits, the more like “icing” it will become.
  • Remove cookies and let cool for at least 20 minutes.
  • When filling has thickened, spread onto cookies and put together. Enjoy!
